chocolate.jpg (6027 bytes)baking.jpg (7898 bytes)This recipe comes from Beverly in New York. It is a delightful combination of caramel, pecans and chocolate to create a wonderful easy-to-make cheesecake recipe. Beverly says:

cheesecakes100.jpg (5359 bytes)I am a person who loves to cook, I especially love cheesecake. I live in New York on the East bay of Lake Ontario. This recipe was given to me by my friend Ruthie who lives in Penn Hills, PA., so the credit goes to her for sharing this with me. Thank you Ruthie, Bev

What you need:

  • 2 cups vanilla wafer crumbs
  • 2 tablespoons unsalted butter
  • 14 ounces individually wrapped caramels
  • 1 (5 ounce) can evaporated milk
  • 1 cup chopped pecans
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup semisweet chocolate chips
  • 2 (8 ounce) packages cream cheese, softened

What you do:

  1. Melt the butter or margarine, and combine with the cookie crumbs.
  2. Press into the bottom of a 9 inch spring form pan. Melt the caramels with the evaporated milk in a 1 1/2 quart heavy saucepan over low heat. Heat and stir frequently until smooth.
  3. Pour caramel sauce into crust, and top with pecans.
  4. In a large bowl, combine cream cheese, sugar, and vanilla; beat well until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Melt the chocolate, and blend into cream cheese mixture.
  7. Pour chocolate batter over pecans.
  8. Bake at 350 degrees F (175 degrees C) for 40 minutes.
  9. Loosen cake from the edges of pan, but do not remove rim until cooled. Chill completely. Makes 9 inch cheesecake

Beverly's Best Chili

She says, "I have been cooking all my life. It is one of my favorite pastimes. This particular dish has developed along the years. I have always loved mushrooms, so I added them. I experimented around until I got a recipe that was just right for everyone in the family including the sons who liked cheese or ketchup on everything. We really enjoy this dish and I hope you will too, especially on a cold snowy night up here in New York on Lake Ontario.

Chocolate Fudge Cheesecake

Coconut Ricotta Cheesecake
This recipe features a decadent Coconut Ricotta Cheesecake. This luscious dessert is the perfect ending to any dinner. You can decrease the calorie count by using low fat ricotta cheese, sour cream, and cream cheese. Using fat free products don't fare as well in this recipe, so use either full fat or low fat products.
