click here to find out more about SueThis week's Recipe of the Week features a delicious Father's Day breakfast. Treat Dad like a king with this egg, potato, and bacon dish. Egg Skillet is simple and easy to prepare and the kids can help. You can cook the bacon yourself or buy one of the new pre-cooked bacon products.  If the man in your life prefers ham cut about 2 slices of ham into 1/2 inch pieces and substitute for bacon.

What you need:

  • potato.jpg (5669 bytes)eggrecipes.jpg (3476 bytes)1 tablespoon of cooking oil
  • 2 cups of frozen hash brown potatoes
  • 6 eggs beaten
  • 1 package of the pre-cooked bacon ( 2.1 ounce size) or 4 strips of cooked bacon- they should be cut into 1/2 inch pieces
  • 1/3 cup of slice green onions
  • Salt and pepper to taste
  • 1/3 cup of shredded sharp cheddar cheese
  • Chopped tomatoes

What you do:

  1. Heat the oil in a medium non-stick frying pan on medium high heat.  Add the potatoes and cook for 8-10 minutes until the potatoes are browned, stirring occasionally.
  2. Mix the eggs, bacon, onions, salt and pepper in a small bowl.  Pour egg mixture evenly over the potatoes. Reduce heat to medium low; cover.   Cook for 10 minutes or until the eggs are set.  Remove from the heat.   Sprinkle with cheese.  Garnish with chopped tomatoes and additional onions.   Cut into wedges.  Makes 6 servings.
