I'm not much of a cook, and we've been eating out way too much as a result. I do love to bake desserts, but other than that I'm at a loss! I can't just make up dishes, but I can certainly follow a recipe! My grandmother always said, "If you can follow a recipe, you can cook." So, I was hoping some of you might have some recipes for some one dish dinners, casseroles, vegetable side dishes and the like. And just for good turn, I thought I'd include a favorite main dish recipe I got from my mother-in-law. Thanks and enjoy!

What you need:

  • Two boxes frozen broccoli
    (thaw or cook in microwave)
  • Three large or four medium boneless, skinless chicken breasts
  • One can cream of chicken soup
  • One can cream of celery soup
  • ¾ cup milk
  • Three slices Velveeta cheese

What you do:

  1. Preheat oven to 350 degrees
  2. Cut chicken breasts into halves or thirds
  3. Brown each side of chicken
  4. Line the casserole dish with broccoli
  5. Place chicken pieces on top
  6. Combine both soups, milk, and cheese over warm stove
  7. Pour soup mixture over casserole
  8. Bake in 350° oven for 50 min – 1 hour

Sue's Yeast Rolls
The one thing that is sure to be on our dinner table is yeast rolls.  It is one of my favorite breads. These rolls are light, fluffy, and easy to make. They are a family tradition in my house ! Watch them disappear! I hope you love these as much as I do !!

This delicious casserole is a wonderful dinner entree and can be reheated for lunch the next day.  Add dinner rolls and you have a fabulous meal! Lori says: "You can prepare Italian Bake the night before and baked the next day.  It's terrific for the long warm days of summer when you don't want to spend a lot of time in the kitchen.
